General description of recipe
Ingredients
1 lb chicken
19 oz can straw mushrooms
1 stalk fresh lemongrass, sliced
1/4 c fish sauce
a few Kaffir lime leaves
a few slices mild ginger galanga
1/2 c lemon juice
3 T chili paste with soya oil
1/4 c green onions, chopped
1/4 c fresh cilantro, chopped
5 c water
Preparation
In a large pot, bring water to boil. Add lemongrass, kaffir lime leaves, and galanga and boil for 5 mins.
Add chicken and cook until almost tender.
Add straw mushrooms, lemon juice, fish sauce, and chili paste and bring to boil.
Remove from heat, sprinkle with cilantro and green onions, pour into serving bowl, and ladle into individual bowls.
