Ingredients
3 large very ripe bananas
1 3/4 c flour
1/2 c unsweetened coconut
1/3 c sugar
1 T baking powder
1/2 t baking soda
1/2 t salt
1/2 t cinnamon
1/4 t nutmeg
2 eggs
1/4 c vegetable oil
1/2 t vanilla
Preparation
Heat oven to 350 degrees. Grease 9"x5" loaf pan. Mash bananas to measure 1.5 c. In a large bowl, stir flour with coconut, sugar, baking powder, soda, salt, cinnamon, and nutmeg. In a small bowl, whisk eggs, whisk in oil and vanilla. Pour this mixture into the center of the dry ingredients, stir until batter is moist. Stir in bananas - DO NOT OVER-MIX. Pour into greased loaf pan. Smooth top. Bake in center of oven 55 to 65 minutes or until cake tester into center comes out clean.
