General description of recipe
Ingredients
1/2 c chicken, beef, or pork
16 oz package thin rice noodles
2 medium eggs
2 c bean sprouts
1/4 c green onions
1/4 c crushed peanuts (optional)
3 T vegetable oil
bean sprouts for garnish
lemon or lime slices for garnish
fresh cilantro for garnish
pad thai sauce (see sauces recipe section)
Preparation
Soak noodles in hot water for 15 mins, then drain until dry (about 30 mins) before cooking.
In a wok or skillet, bring oil to high heat.
Add meat and cook until tender.
Add eggs, whisk into meat, and cook until egg sets up and is cooked.
Add noodles and Pad Thai sauce and cook until noodles absorb the sauce and become dryer.
Add bean sprouts and green onions and cook briefly until the bean sprouts are cooked. Pour onto a serving platter and sprinkle with crushed peanuts.
Garnish with fresh bean sprouts or cilantro leaves an a few slices of lemons or limes.
