Ingredients
4 chicken breasts
1 T butter
1/4 c green onions. sliced
1/2 red bell pepper, diced
1 c raw rice, cooked
1/2 c sour cream or low fat sour cream
2 oz green chilies, chopped
1/4 c black olives, sliced
1/2 jar Queso Loco Salsa
salt (optional)
pepper (optional)
Preparation
Season both sides of the chicken with salt and pepper. Melt butter in a large skillet, add chicken and cook 5 minutes, turn chicken, add green onions and red pepper. Cook 5 minutes. Transfer chicken mixture to a plate and keep warm.
In a bowl, combine rice, sour cream, green chilies, and olives.
Spread rice mixture in the skillet. Put the chicken mixture over the rice mixture. Pour Queso Loco over the chicken. Cover and cook for 15-20 minutes or until done. Can be placed in a 9"x13" pan and baked in a 350 degree oven for 15-20 minutes or until done.
