Ingredients
1 c milk
3 large eggs
3/4 c all purpose flour
3 T granulated sugar, divided
2 T butter
2 medium cooking apples (i use ~ 10), peeled, cored, cut into 1/4" slices
1/4 t cinnamon
1 T confectioners sugar
Preparation
Preheat oven to 375 degrees. In a medium-sized bowl, whisk together milk, eggs, flour, and 2 T granulated sugar. In a 9" or 10" heavy oven-proof skillet over med-high heat, melt the butter. Add the apples, cinnamon, and remaining 1 T granulated sugar. Reduce heat to medium and cook, stirring occasionally for 2-3 minutes, or until the apples are softened slightly. Remove the pan from the heat. Pour the batter over the apples in the pan. Place the pan in the oven and back for 35-40 minutes or until the pancake is lightly browned and puffy.
Remove the pan from the oven and cut the pancake into wedges. Transfer the wedges to warmed serving plates, dust wedges with confectioners sugar.
Preparation
Mom may have increased the ingredients to 4 XL eggs, 1.5 c. flour, and 5 T. sugar.
