Ingredients
1 can (15 oz) dark red kidney beans, drained and rinsed
1 can (15 oz) great northern beans, drained and rinsed
1 large tomato, washed, chopped
1 small onion, peeled, diced
1 c fresh parsley, finely diced
2 T olive oil
1/4 t salt
juice of 1 whole lemon
Raspberries
Strawberries
Marscapone Cheese
Powdered sugar
Maple Syrup
Preparation
In a large serving bowl, toss together the kidney beans, great northern beans, tomato, onion, and parsley. In a small jar or measuring cup, mix the lemon juice, olive oil, and salt. Pour the dressing over the bean mixture and gently toss.
