Ingredients
5 chicken breasts
1/4 c water
1/3 c olive oil
2 T mesquite seasoning
1/2 t red pepper
1 T lemon juice
1 t salt
2 cloves garlic, minced
salsa for dressing
ranch dressing
shredded cheese
guacamole
tortilla chips
lettuce
shredded red onion
Preparation
Marinate chicken overnight using the water, olive oil, mesquite seasoning, red pepper, lemon juice, salt, and garlic.
Grill the chicken over medium heat 10 minutes on first side, 7 minutes on second side. Let chicken rest 5 minutes before cutting into strips.
Dressing: equal parts of salsa and ranch dressing mixed together.
Salad: mix lettuce, chicken, shredded cheese, red onion, guacamole. Crumble tostitos on top.
