Ingredients
1 1/4 c raw rice
1 T rice
2 c water
4 c milk
4 egg yolks
3/4 c sugar
1 t salt
cinnamon (optional)
cool whip (optional)
Preparation
Simmer rice in water and milk 45 minutes or until thick and rice is soft. Beat yolks well with sugar. Gradually stir rice into eggs and mix well. Return to cooking pan and add salt. Cook over low heat for 2 minutes, stirring constantly with a fork to prevent curdling. Sprinkle cinnamon and cool whip over top.
